The kids are gone! Joe and Theresa go on vacation! 2026/03/24

It's Spring Break and Theresa and I just put on the kids on an airplane to fly out to Colorado to hang out with their grandparents and cousin all week! Time for us to do something fun too! On past trips, we've dropped the kids off and headed to Tahiti, and then another time we flew to Bora Bora. Where to this time? 


Well, let's go through the list of things we like. Warm temperatures. Good food. A place to relax and read a book. No appointments and nothing required for us to do. Some of our favorite vacations have been sitting in a beach chair and reading a book for 8 hours with minimal interruptions. Hmm.

You know what? Florida has warm weather. We make delicious food. We can find a place to relax and not schedule any appointments. Why don't we just do a stay-cation here! Theresa found us a couple portable hammocks and we've got a nice lake right beside the campground. Perfect!  

A year ago, we went on a Carnival cruise with the kids. We enjoyed having a wide variety of food that we could pick from for lunches and dinners, plus that anytime pizza place that served really good pizza. 
For lunch, I made myself steak tips plus a homemade alfredo sauce fettuccine. So good! 

Plus a couple freshly baked cookies for dessert!

And a bowl of her homemade vegetable soup. 

The kids room? It's turned into the snack room. These will be sitting out all week to grab whenever we like. 

The day was spent outside reading, and when it was time for dinner, I grilled some tasty filet medalions for Theresa and a big ribeye for myself. 

The next day we were up bright and early.... Hahahaha, no. Definitely not. We slept in! Then outside to the porch to start reading a book. 

Lunch/snack, so gyoza from the freezer. 

And another homemade alfredo pasta for myself. 

Theresa had been talking about Dairy Queen and a dipped cone for the last week or so. She hasn't had one in forever and the nostalgia was hitting pretty hard. We took a trip in the car to go grab one for her. 

And she remembers it being a lot better than it really was. Her tastes have changed and she doesn't love the cheap chocolate shell anymore. She peeled all that off and enjoyed the soft serve ice cream by itself instead. 

Did someone say pizza? And steak? 
Yes, I got both the grill and the pizza oven out tonight. 

Oh yes. We are eating well on this staycation. 

Lots of variety, just like a cruise. Pizza and a ribeye for me. 

Filet mignon, sourdough bread, pizza, and vegetable soup for Theresa. 

And reading in the hammock until it was time to go inside. 

The next day, back outside to read even more! All these uninterrupted hours are amazing! Tater tots cook up so nice and crispy in the air fryer. 

Last week we stopped at Trader Joes for some special desserts, like these frozen lemon bar bites and apple blossom pastries. 

And why not some extra homemade cookies. 

Doing this all day. So rough.

And Korean soup and rice for Theresa. Just what she wanted. 

These pictures seem to all be about food I guess. You can't get very exciting pictures when you're just reading all day. My lunchtime burgers. Cheddar, onion rings, and BBQ sauce for one. Grilled pineapple and aged cheddar for the other. So good!


Our afternoon was spent down by the lake in the hammocks. 

Watching the gator swimming behind the "Warning: Gators" sign. 

Dinner. Pizza, steak, korean side dishes and rice. 

We are eating well. 

The next day for dinner we thought we'd try something new. We love PF Changs, but there's not really one nearby. We took at shot at making fried rice and Chang's Spicy Chicken at home. 

It turned out pretty good, but I think we'll tweak a few things in the recipe for next time. 

It's our last day of staycation. Steak tips and pasta for lunch. 

And a ribeye and tater tots for dinner. 

I think we're both going to need to diet once the kids get home. 

And speaking of the kids, Ian and Alli are on their way back! Ian took a selfie on the jetbridge in Colorado and sent it to me. 

Theresa and I made our way to the Orlando airport to pick them up. 

There they are! 

Aww. 


Good to have you both home. We've missed you.
