Halloween Treats - Homemade Pumpkin Cake

It's officially Fall! That means it's time to make some delicious fall treats. Theresa's sister made this recipe last week and raved about how good it was. Theresa is going to make this week!

To make this special pumpkin cake, she enlisted the help of Alli and Ian. The recipe came out of a cookbook for Pumpkin Bars. 


Alli and Ian are taking turns adding ingredients. Alli was first up with a cup of oil. 

Ian followed with 2 cups of sugar. I can already tell this is going to be tasty. 

Theresa opened a can of pumpkin puree and added that to the mixing bowl. 

Alli is becoming an expert in cracking eggs. 

After cracking 4 eggs, she added that to the batter. 

Ian scooped in 2 cups of flour. 

Then we added all the spices. Instead of buying Pumpkin Spice, which is pretty expensive, Theresa made her own at home. It's just nutmeg, cloves, cinnamon, and ginger. 

Ian is greasing a large pan with butter. 

And then the two of them mixed the batter thoroughly. 

Alli is holding it for Ian while he stirs. 

Then it goes into the greased pan and into a 335F oven for 40 minutes. The house was smelling really good. 

Pulling it out of the oven and it looks perfect. This will need a little time to cool off. 

Theresa whipped up a batch of homemade cream cheese icing to go on top. 

Yum!

What do you think kids? 

Oh yeah! Alli really liked it. And Ian gave it a big thumbs up. 

Of course Chi and Richard came by for a taste. Richard and I might have had another small piece after our first one. Richard - It's hard to eat just one. 

Nice job Theresa, Alli, and Ian! This tastes like Fall!
