Happy Pi Day! Let's celebrate Pi day with a few different Pizza Pies! And for some further alliteration how about a Pesto Pi Pizza Pies! And even better, we've got Jacob visiting us!
Since we're celebrating Pesto, why not make a couple different pesto pizzas today? For our first, we're doing a play on the Napa Rose/Margherita pizza that we're going to call the Therizza going forward.
Instead of having no sauce base, we're going to step it up a little bit with a pesto base. On top of that we're adding mozzarella, goat cheese, grapes, ham, and tomatoes.
Then once it's done baking, it gets topped with basil and balsamic vinegar.
For our second pesto pizza, Theresa started with pesto and mozzarella.
Then added garlic and fresh tomato slices.
It baked up beautifully.

Even with all the toppings, the crust stayed nice and crispy.
Theresa said the pesto added a complexity to her usual Therizza pizza. That might be a new addition to the her standard toppings.
As for the second pesto pizza, it was also tasty, but it was pretty basic. The pesto was great, and the fresh tomatoes really held the heat. Between the two of them, the Therizza with pesto was the winner.
And we couldn't let a pizza night go by without making an original Theresa. With tomatoes, caramelized onions, prosciutto, grapes, gorgonzola, basil, and balsamic vinegar.
And we can't close out Pi Day without some tasty Publix Key Lime Pie! Thanks for bringing it Jacob! Happy Pi Day!
Now that was a delicious way to celebrate Pi Day! Those pesto-based creations baked beautifully...great creations. Then to top it off with the Key Lime Pie was the cherry on top. Great to see Jacob again! Who coined the "Therizza" name?...like that! EOMReplyDelete
